Yup that's how I feel at times. And what better way to get a "carb up" and golden roasted potato nuggets!
Am I right?!?
There is a trick to getting perfectly roasted potatoes and I'm gonna share that with ya
We've all had that roasted potato that has that delicious crispy outer skin and then when your teeth break into it, you have that fluffy center. Now I'm not talking about that chewy outer skin that when you bit it the insides come out the other end. Nope, this is that crispy golden crown that all oven roasted potatoes should have!
Parboiling the potato nuggets first ssshhhhhhh!!!! This will be our secret ok? Ok
While there is a little prep time for these golden little gems before they hit your plate, but believe me, it's well worth this extra step.
Plus, when you want to cook a delicious meal, there will be a little time and an extra dish or two to clean up. So we must deal with it.
Lemon Dilly Golden Nuggets
serves 4-6 depending how hungry you are
~ 6 large Russet Potatoes
I always buy organic potatoes. And the Russet will have a fluffier interior
Peel or scrub the potatoes and cut into 2 inch chunks. Parboil in salted water no longer than 4 min.
Drain and let cool a bit.
~ Juice of one organic Lemon
~ 2 TBSP of Lemon Dilly Seasoning (get here)
~ Sea Salt
~ Black Pepper
~ 1/4 Cup Olive Oil or Avocado Oil (do not use extra virgin olive oil)
Preheat oven to 375.
Place a rimmed cookie sheet in the oven while it heats up. This is another trick.
Pour lemon juice over drained potatoes and toss. Let sit for a min or two so the potatoes soak in the lemon juice.
Then add in the Lemon Dilly seasoning, salt and pepper and 1/4 cup of oil. Toss to coat well.
When the oven is preheated and potatoes are ready, take out the hot pan and put the potatoes on it. They should sizzle when they hit the hot pan. This will prevent them from sticking as well as help start the crispy coating.
Bake the potatoes for 60 min or until tender. After the first 10 min, give the pan a shake, and again 20 min later.
Place hot potatoes in serving bowl and sprinkle a little fresh dill and another sprinkle of salt.
Makes a delicious side dish to all your favorite meals. I like mine with just in a bowl with a sprinkle of vinegar...cuz that's just how I roll!
