I love anything apple, and the addition of cinnamon, well who can NOT like it!
Almost every time we head out and stop at Tim Hortons, If hubs decides he wants a donut, it is usually the Apple Fritter. Now, these ones are NOT like the Tim's ones for sure, but they certainly hit the spot when you are looking for something to have with your coffee/tea. Plus these ones are WAAAYYYY healthier for you!
I actually made these today as it is National Apple Cider Day tomorrow. But I have my grand daughter with me tomorrow, so I whipped these up today.
I found the main recipe I used, from Melissa over at I Breathe I'm Hungry. I changed things up a little so I can keep this dairy free.
For the fritters:
Combine the dry ingredients in a medium bowl. Warm the almond milk in the microwave for 1 min. Then add the Apple Cider Tea Bag and let steep for 3 min, remove bag. Whisk together the eggs, almond milk tea mixture, and melted coconut oil in a small bowl. Add the wet ingredients to the dry ingredients, then add the apples and stir well. Let sit for 2 minutes. Form into 18 tightly packed balls. Heat about 1 inch of coconut oil in a heavy bottomed pan (cast iron works great) until about 350 degrees (F). Fry the fritters for 1 - 2 minutes per side or until golden brown and cooked through. Remove to a paper towel to drain any extra oil.
