Spring has sprung...the grass is ris....I wonder where the birdies is....
When I was a kid I remember reading that line in a Garfield Comic strip in the weekend newspaper that my parents would get (They loved doing the word search and reading the obituaries - don't ask...)
But every spring I always remember this comic haha. It just makes me giggle.
I love spring, the mornings are still cool with fog, sunrises are beautiful, the air smells so fresh. And the food starts to get lighter it seams. More relaxed.
I do love a good salad all year round, however, spring just gives that freshness to the salads with more flavors. And this quinoa salad does just that!
The crispness of peppers, the freshness on green onions and the brightness of fresh squeezed lemons will make your taste buds just dance with delight!
This salad serves 6 as a side or 3 as a main (makes a great light lunch with a slice of sourdough)
1 Cup Quinoa
2 cups filtered water
1/4 tsp minced garlic
1/2 tsp fresh grated ginger
2 Tomatoes diced
1 Cup diced cucumber
1 cup diced bell peppers (I use orange and red)
1/2 cup matchstick carrots
I cooked my quinoa like this:
Place the quinoa, water, garlic and ginger in my large multi purpose steamer (I use this one)
Stick it in the microwave for 12 min on high. When it is ready. let sit for 2 min then fluff with fork. Let cool.
Prep all the veggies except the sprouts, and add into the steamer with the cooled quinoa.
1/4 cup extra virgin olive oil
2 tbsp of Real Maple Syrup
1 tbsp Lemon Dilly Seasoning (get it here)
Zest and juice of 1 lemon
1/2 tsp pink salt
Cracked black pepper to taste
Mix all together and pour over quinoa mixture.
Place the salad in pretty dishes and top with fresh sprouts.
Sit back and enjoy the freshness exploding in your mouth
