I love chicken wings...believe me...any flavour, any kind. But they do not like me!
Lately meat just does not sit right with me...or should I say sits too long with me...
Yup once again my digestive system decided to reject meat of any kind, causing huge disruptions in my daily life!
So I needed something to fill the void!
Now I have had Cauliflower "Wings" before...but these ones are the bomb!!
Believe me everyone will love these little gems!
I made these today and decided to make a Buffalo Cauliflower Taco, being Taco Tuesday and all!
Buffalo Cauliflower "Wings"
2 cups of cauliflower pieces (I used frozen. Just thawed them out)
1 Cup All Purpose Gluten Free Flour
1 Cup Cashew Cream (I just soaked 1 cup of cashews over night. Drained and put in blender. Added enough filtered water to cover then by 1 inch and blended until really smooth. This STUFF is freakin magical! It thickens like heavy cream and great for Vegan Mac and Cheese)
If you don't want to make cashew cream, just use coconut milk from the can mixed well.
1 Cup Gluten Free Panko Crumbs
Dip cauliflower pieces in flour than in cashew cream, them in panko crumbs and place on baking sheet.
Spray with some Avocado oil (Helps with browning)
Bake at 425 for about 30 min, or until crispy.
Mix up 1/4 -1/2 cup hot sauce with 2 tbsp of Earth Balance Butter alternative, melted. Pour over cauliflower pieces. Mix up to ensure all pieces are coated. Place back in oven for another 8 min.
Enjoy with a Vegan Ranch Dip and some veggies or do as I did and make a Taco!
Pictured below with some Mexican Rice and Refried Black Beans, and a drizzle of Avocado Cream and some Daiya Vegan "Cheese" Shreds !
Just mash some avocado (about 1/2), mix with some cashew cream and 1 tbsp Guacamole Mix!
