Growing up, there was nothing better than coming home to a warm batch of chocolate chip cookies.
And when I had my daughters some 20 years ago, I loved making them my favorite cookie.
Today, for my boys (7...well almost 8, and 6...yup I started all over again) I made my favorite (and theirs too) cookies...but I give them a little makeover.....
A little while ago, I got this amazing silicon mold in the shape of Bars....you can check it out here
So I though why not use this and make petite bars for a change. And they turned out perfect!
You are going to love this recipe because it is totally Vegan, so it's safe to eat the batter, plus I used Organic Coconut Sugar, which doesn't spike your blood sugar like regular sugar. Plus, because it is a vegan recipe, instead of an egg, I used a Flax Egg, so the addition of flax to cookies that no will detect! Win Win for everyone!
These bars are ooey gooey and chewy.
If you do not have a bar mold, you can make regular cookies and they will be just as delicious...I promise
The Ultimate Chocolate Chip Cookie Bar
Makes 12 large cookies or 18 cookie bars using the mold I used
3/4 cup organic flour (For Gluten Free - Use 3/4 cup of my All Purpose GF Flour Mix)
1/4 + 1/3 cup organic Oat Flour
1/2 tsp sea salt
1/2 tsp organic baking soda
1/2 cup vegan butter (1 stick of Earth Balance Vegan Butter is what I use)
3/4 cup organic coconut sugar
1 tsp organic caramel flavour
1 Flax egg (1tbsp ground flax and 2.5 tbsp water mixed and let sit until thickened)
3/4 cup of Vegan Chocolate Chips (I used Enjoy life brand, mini ones)
Pre-heat oven to 350 degrees.
Mix the flours, baking soda and salt together and set aside.
with hand mixer or in the bowl of stand mixer, mix the butter and sugar together until creamy. Then add in flax egg and the caramel flavour. Mix well.
Add in the flour mixture until combined. Do not over mix as it will make the cookies tough.
Then fold in the chocolate chips.
Spray cookie sheet or bar mold.
If using the bar mold, they will take a little over 1 tbsp of dough.
If making cookies, I use a medium cookie scoop just cause I like things even (that's my OCD)
Bake 12-15 min depending on the size of the cookies.
Enjoy with a large glass of cold home made almond milk or coconut milk....and don't forget to dunck those cookies :)
